Breakfast Granola

I have been making my own breakfast cereal for close to 40 years. This recipe is high in fibre, a balanced source of healthy protein with a little healthy fat. I usually serve it with added berries and pour some of my ‘Healthy Berry & Nut Smoothie’ over the granola for a great start to the day.

Dry IngredientsMethod
250gm Rolled Oats
50gm Wheat bran
50gm Wheat germ
100gm Sunflower Seeds
50gm Milled Flaxseeds (Linseeds)
50gm Chia Seeds
200gm Chopped Almonds
50gm Desiccated Coconut (optional)
In a large bowl add dry ingredients.
In a measuring cup mix wet ingredients.
Add wet to dry. Mix, but will be clumpy.
Spread out on baking trays put in oven at 120c
After 15 minutes remove and break up lumps. Repeat after another 30 minutes.
If dry, turn off and leave to cool. If still a little wet, leave in oven for another 15 minutes before turning off.

25 ml Sunflower Oil
125 ml Water
100gm Dried fruit
Store in a Tupperware container.

Not only is this a really tasty and healthy breakfast option, it is a very handy snack to have in the cupboard. Sometimes my kids will just grab a bowl with added yogurt and a handful of blueberries for an after school snack or put a portion in Tupperware and take to school for lunch.

A big bonus is it’s free from sugar and preservatives, plus a lot cheaper than the supermarket brands.
